What should I do after I build my client's website, host it or not?

First of all, I am a junior and I never had any clients. I am building some projects to showcase for now. I tried to do my own research, but I cannot come to a final conclusion. I am going to try to write the routes below. They are pretty much related to hosting.

Let's take for example an informational site (basically just front end, but I am also curious about the best approach for an eCommerce store too):

  1. Use Wordpress.

1a. Have a big account with all my clients' websites, and give them editor/author access to their website.

1aa. I purchase a domain for each one, with their money. I'm not sure how it works, but I think it's easy, have a paid subscription on the main account, choose a domain through the Wordpress interface, and the site is now hosted.

1ab. Let them handle the hosting, just build the site and direct them to Bluehost or something. I'm not sure if this works, since the site will be built on my account.

1b. Build the website on their own Wordpress account, and eventually guide them through the hosting/domain setup (the one mentioned at 1aa).

  1. Build the site from scratch.

2a. Handle hosting for them, with Bluehost for example.

2b. Let them host, eventually guide them through the setup.

  1. Others??

I want to keep contact with the client as less as possible after I build their site. This means I would like for them to pay the hosting fees with their own credit card. I think this means the 1a option does not work.

Also, this means they should know how to update their site later on, for example change a phone number. But if I use Wordpress, I have to teach them how to use it, and I am sure that most of them will not be that experienced with this sort of stuff. If I do not use Wordpress, I don't know how they should update the info, but I found something called CouchCMS.

I think I am more comfortable with building reusable emplates from scratch, than using Wordpress. I see that it has some limitations. I didn't dig deep into it yet, and I think I have to get a paid subscription to have full control over the site, and I don't have starting money. Also, if the client asks for a more complex website, like where it needs to accept purchases, or have a mailing list, that wouldn't be possible from scratch.

Also, I have no idea about the company email (I think that's how its called) for example abcd@websitename.com

I am sorry for being a noob, pretty much everything is a mess here. I hope someone can make order out of this.
